Salad prep for the week! First I chop, soak, and rinse the lettuce. This week I bought fresh corn and using a bunt pan to shave the kernels off is a trick I borrowed from my days back as a food network addict ;-) lol. After everything is chopped, they go into large containers to make assembling them during the week a piece of cake. Scraps go in the compost bin and what you are left with is a delicious and healthy salad! Today I used spicy cilantro hummus for the dressing and let me tell you it is the SHIZZZZZ!!!! YAY LAS ENSALADAS!!!
